Raw vegan Rafaello candies





1 1/2 cup coconut flakes

1/4 cup dates

1/3 cup walnuts

1/2 cup almonds

2 tbsp melted coconut butter

2 tbs carob

1 tsp vanilla extract

tiny pinch of Himalayan salt


1. Soak the walnuts and almonds over night, and the dates at last 30 minutes.

2. In a food processor blend the dates, walnuts, almonds, vanilla, carob and salt until combined and slowly add the melted cacao butter. Then add the coconut flakes, it should be a slightly sticky dough consistency.

3. Roll it into teaspoon sized balls and roll into coconut and cacao powder. Allow to chill in the fridge if the weather is warm otherwise keep them out on the table and watch them disappear!
